Bikini Recipe

Yields 10 people

Ingredients for the Clementine Syrup (yields 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

To make the Premix (produces 850ml, serving 10)

400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch

Instructions

For the Cordial: Put the listed components in a saucepan, heat until it reaches a gentle boil, stirring to dissolve. After that, remove from the stove and leave to reach room temperature entirely. Pour to a sterilised bottle, seal keeping it chilled, where it will keep for up to one month.

Preparing the Premix: Combine all the spirits and syrup in a large bottle, leave to sit for 60 minutes, then filter it best through a fine cloth, so it's completely strained.

For serving: Measure 85ml of the batch mix into a stirring glass filled with ice, gently stirring gently for about 60 seconds to cool it down. Strain into an frosted cocktail glass or similar, garnish with the cranberries adding the final touch using a brief mist with the mandarin essence over the top.
